What does the percentage under 'categories' that appears next to 'saildate' mean?

I am having a hard time understanding the concept behind knowing that "87%" of the categories on a certain sailing are available. I am not referring to individual cabins but the percentage number that appears next to the sail date before you get to the itinerary and the breakdown for all the cabins. Why is this important and what does this number tell you? Does it tell you that 87% of the ship is unbooked? Or does it tell you that all the categories have 87% availability?

I see you have no answer yet. I am not 100% sure but I believe it means that 87% of the categories have availability. *(i.e. 13% of the categories are sold out but there is at least one cabin available in the remaining categories)

You are very welcome. I hesitated because I wasn't completely sure.
